Green Pea Pesto Crostini

If you’re looking for a fast and easy appetizer, look no more! The Green Pea Pesto Spread itself took, oh, about 60 seconds to make! And an added bonus, it’s healthy, too.

I needed a last minute recipe for tonight’s Christmas Party, and had remembered this one from Cooking Light. Not only was it super easy to make, but it didn’t break the bank like most holiday dishes. The total grocery cost was less than $15.


1 cup fresh basil leaves (1 small package in the fresh herb section)

1 cup frozen peas, thawed

2 tbsp extra virgin olive oil

1 large baguette, toasted

1 package prosciutto, thinly sliced

1 small package goat cheese

1/4 tsp salt

Fresh ground pepper, to taste


  1. Toast & slice a large baguette if not already done so. Tip: Buy a pre-sliced baguette for the same price, lay out the slices flat on a cooking sheet, and coat lightly with olive oil spray for added crispiness. Cook for 5 min on 425.
  2. Add basil, peas, olive oil, and salt to a food processor. Pulse for about 10 seconds.
  3. Spread the Green Pea Pesto Spread evenly onto your baguette slices, and top with sliced prosciutto and goat cheese. Garnish with ground pepper to taste.
  4. Enjoy the extra time you just gained back in your day! And more importantly, have fun at your holiday party!
