No Bake Energy Bites: A Healthy Snack
It’s hard to believe something this delicious actually provides energy. I swear I feel like I’m eating dessert when I bite into one of my Funky Monkey No Bake Energy Bites! They are gluten-free, made of all-natural ingredients, and filled with protein and nutrients.
I found the secret ingredient from one of my favorite health food bloggers, Rachel Mansfield. She developed a Vanilla Almond Bliss Ball recipe using Justin’s Vanilla Almond Butter! Total game changer. There aren’t many natural almond butters that I enjoy eating straight out of the tub, but this is one of them. It is delicious, and you can have it on your doorstep in two days if you order here via Amazon Prime.
I came up with an adaptation of Rachel’s recipe, using ingredients that I had in my own pantry and kitchen. They are so easy to make, and you can’t ruin them because they are No Bake! Don’t be afraid to play with your favorite toppings and share your own personal variation of energy bites!
Funky Monkey No Bake Energy Bites
Protein Powder, 1 scoop (I used Paleo Pro Ancient Cacao, available at Sprouts. It is whey-free, gluten-free, and soy-free.)
Justin’s Vanilla Almond Butter, 3 tbsp.
Peeled Banana, 1/2
Gluten-Free Oats, 1/2 cup
Chia Seeds, 2 tbsp.
Coconut Flakes, 2 tbsp.
Optional: Vanilla, 1 tsp.
*Yields about 5-6 energy bites.
- Line a tupperware with parchment paper.
- Combine all ingredients in a food processor or bowl.
- Use your hands to form round balls (aka energy bites).
- Place the energy bites in the tupperware and allow to cool in the freezer for about 30 minutes. Can be refrigerated up to a week.
