Chicken + Cilantro + Lime = The Best Combo Ever!

Alright cold and flu season, we’re coming for you! This Chicken Cilantro Lime Soup is the best combination of fresh ingredients that are both nutritious and comforting. It’s super easy to make, too! The recipe calls for a slow cooker, so you literally just set it and forget it!

Just throw your chicken breasts in (or leave them out if you prefer the Vegan preparation), add the remaining ingredients (I used everything I had in my fridge for tacos – from lime to cilantro, red radishes, garbanzo beans, etc.) and some seasoning (like taco seasoning, garlic, and salt). Cover everything with broth, and in 4ish hours… Presto! You have a hearty and fresh Mexican soup!

Don’t be scared by the long list of ingredients. The great thing about soup is that you literally can’t go wrong. Play with what you have in your fridge, mix and match flavors, and share the variation that you came up with on social media or in the comments below! Chicken Cilantro Lime Soup

Ingredients

Boneless, Skinless Chicken Breasts, 2 whole (can omit and double garbanzo beans for Vegan option)
Low-Sodium Chicken Broth, 3 cups (can sub with Vegetable Broth for Vegan option)
Garbanzo Beans, 1 can
Red Radishes, 3 sliced
Fresh Chopped Cilantro, 1 cup
Green Onions, 1/2 cup
Red Onion, 1/2 medium chopped
Taco Seasoning, 1 tbsp.
Minced Garlic, 1 tbsp.
Juice from Fresh Limes, 2 whole
Salt & Pepper, to taste
Topping: Fresh Avocado, 1 whole

Recipe

  1. Add all ingredients to a slow cooker and cook on LOW for 5-6 hours or HIGH for 3-4 hours.
  2. Top with fresh avocado and cilantro, and hot sauce if desired. Can also be served over brown rice Jambalaya-style!
  3. Enjoy!
