Summer Salad Vibes
110 degree heat.
Blasting the A/C.
Carrying around bottled water like it’s your job.
These are the signs of summer.
And summer calls for something fresh.
Yesterday I went grocery shopping at Whole Foods and came across a cherry tomato station to hand-pick your own basket. The assortment of yellow, orange, and red was too cute not to build my own!
I knew we had leftover ears of corn from a BBQ last weekend, so the concept of the grilled summer salad was born.
A summer salad needs veggies, of course, so I grabbed a head of asparagus and a fresh, ripe avocado, as well.
I have to be honest; I don’t ordinarily like salads (just the toppings), so I promise you that if I’m taking the time to post this, it’s good!
The recipe below is super easy. And my secret weapon is Chosen Foods cooking spray.

You’ll notice that this summer salad is less than 300 calories! While it is proportionately higher in carbs and fat, and lower in protein, it is the perfect combo because it will give you energy.
As long as you’re eating fibrous carbohydrates and healthy, unsaturated fats, please don’t be alarmed.
My husband is a protein-lover. So while I grilled the corn and asparagus, he added a couple of organic chicken breasts to the grill and topped his salad off with additional protein.
If you go this route, I would recommend seasoning the breasts with fresh ground pepper and a tangy marinade to compliment the veggies.
