For the Love of Beans!
Ok truth be told, I love beans. But my body hasn’t always loved them. In fact, most people avoid them. We all know the saying, “Beans Beans, the Magical Fruit, the More You Eat, the More You… (well, you know the rest)!”
But Better Beans? They’re different. I was recently introduced to this brand, and believe me, I will never touch a can of beans again!
Better Bean does three things to make their beans easy on your digestive system:
1. They use freshly grown beans. Beans become harder to cook and digest the older they get, so they cook them when they’re young.
2. They soak their beans. Soaking activates enzymes that make it easier for our bodies to digest all the wonderful nutrients beans have to offer.
3. They use ingredients that help ease bean digestion. Onions, garlic and cumin help – but the star ingredient? Apple cider vinegar, which breaks down indigestible sugars to help digestion.
Aside from that, all of their beans are non-GMO, gluten-free, soy-free, nut-free, vegan, and low in sodium (about 1/3 the sodium of canned beans).
Because they’re so fresh, you’ll find them in the refrigerated deli section at your grocery store. I got mine at Whole Foods, for example, and found them over in the deli meat and cheese cooler.
Be on the lookout for the rectangular containers pictured below — no cans for these guys. Better Bean containers are BPA-free, fully recyclable, and freezable!
For the Love of Taquitos!
I ordered taquitos for lunch the other day, and they were just “meh.” Actually, they were really underwhelming. They were light on the stuffing and heavy on the fried, greasy tortilla. I thought, “Surely I can make something better than this.”
So I did. And you can, too. The best part is that it’ll only take a few minutes, because this recipe is that easy!
You can do two variations: (1) Classic Vegetarian Bean Taquitos, or (2) Chicken and Bean Taquitos.
I made the first option for lunch using the Better Bean Roasted Chipotle Bean Dip (that’s what you’ll see pictured here). I loved them so much that I made the same thing for my husband for dinner, this time using the Uncanny Refried Black Beans with ground chicken.
The possibilities are endless. I recommend playing with a few different ingredients (a dollop of cream cheese or greek yogurt, a spoonful of BBQ sauce or hot sauce, etc.).
