Easy and Packed with Flavor!
As a brand new momma, I’m super pressed for time. So my dinner recipes need to be easy-peasy, or they aren’t happening.
What I love about this dish is that it looks like it popped out of a 5-star Hawaiian restaurant, but even the most amateur chef can create it!
As long as you can heat ingredients up in a pan, you got this!
The Honey-Lime Chicken Pineapple Boat is a fresh take on the traditional chicken and rice bowl. The combination of honey, lime and soy sauce gives it a sweet and sour flavor all in one.
I love the zesty lime flavoring combined with warm, jasmine rice and pineapple. It’s warm and savory, but fresh at the same time!
How to Make a Pineapple Boat
I love making pineapple boats because they look so darn pretty and fancy, but literally take 2 seconds to make.
You simply slice a pineapple in half, length-wise, and then use a paring knife to cut a grid-like shape into the center of the flesh. You’ll essentially draw a box with a tic-tac-toe board in the center.
After you have your grid cut, use an ice cream scoop or large spoon to remove the pineapple chunks. You can save these later and serve on the side.
I recommend leaving a little bit of the pineapple juice in the bowl so that the rice and chicken soak up the flavor when served.
How to Save Even More Time
Another great way to save time in the kitchen is by finding ingredients that are ready-made. I love this Veetee Jasmine Thai Rice and can’t say enough fabulous things about it.
