Honey-Lime Chicken Pineapple Boats

Easy and Packed with Flavor!

Pineapple Boat 3

As a brand new momma, I’m super pressed for time. So my dinner recipes need to be easy-peasy, or they aren’t happening.

What I love about this dish is that it looks like it popped out of a 5-star Hawaiian restaurant, but even the most amateur chef can create it!

As long as you can heat ingredients up in a pan, you got this!

The Honey-Lime Chicken Pineapple Boat is a fresh take on the traditional chicken and rice bowl. The combination of honey, lime and soy sauce gives it a sweet and sour flavor all in one.

I love the zesty lime flavoring combined with warm, jasmine rice and pineapple. It’s warm and savory, but fresh at the same time!

How to Make a Pineapple Boat

I love making pineapple boats because they look so darn pretty and fancy, but literally take 2 seconds to make.

You simply slice a pineapple in half, length-wise, and then use a paring knife to cut a grid-like shape into the center of the flesh. You’ll essentially draw a box with a tic-tac-toe board in the center.

After you have your grid cut, use an ice cream scoop or large spoon to remove the pineapple chunks. You can save these later and serve on the side.

I recommend leaving a little bit of the pineapple juice in the bowl so that the rice and chicken soak up the flavor when served.

How to Save Even More Time

Another great way to save time in the kitchen is by finding ingredients that are ready-made. I love this Veetee Jasmine Thai Rice and can’t say enough fabulous things about it.

Pineapple Boat 6 - Veetee Rice

Prior to trying this brand, I had yet to find a microwavable rice that truly tasted fresh. Vetee Rice is the real deal! We’re talking restaurant-quality, traditional sticky white rice.

You just pierce a couple of holes in the film, microwave it for two minutes, fluff it, and serve! It’s the perfect addition to these yummy pineapple boats. Make sure to check out my product review here.

Looking for a fun and festive dish? These easy pineapple boats will be sure to steal the show. This dish is a fresh and zesty take on the traditional chicken and rice bowl. The combination of honey, lime and soy sauce makes the chicken sweet, sour, savory and totally delicious. If you’re pressed for time like me, you’ll be excited to know that this recipe was made using Veetee microwaveable rice, which is ready in two minutes!

  • Main Ingredients:
  • Chicken Breast Tenderloins, 1 lb., patted dry with a paper towel
  • Veetee Microwaveable Thai Jasmine Rice, 1 package
  • Pineapple, 1 sliced in half length-wise
  • Olive Oil, 2 tbsp.
  • Salt and Pepper, to taste
  • Honey-Lime Sauce:
  • Honey, 1/3 cup
  • Fresh Squeezed Lime Juice, 3 tbsp.
  • Soy Sauce or Coconut Aminos, 1 tbsp.
  • Lime Zest (grated lime peel), 1 tsp.
  • Salt, 1 pinch
  1. Slice a pineapple in half length-wise and cut a grid-like pattern into the flesh (like you're drawing a tic-tac-toe board). Scoop out the center of the pineapple with an ice cream scoop or large spoon, creating a bowl and leaving some of the juice inside for flavor. Set aside for later.
  2. In a large cooking pan, preheat olive oil to medium-high heat.
  3. Slice chicken into small 1/2" cubes and season with salt and pepper, to taste.
  4. Add chicken to the pan, cooking 8-10 minutes over medium-high, or until done.
  5. In a small sauce pan, begin preparation for the sauce.
  6. Bring honey, lime juice, soy sauce, and lime zest to a boil. Reduce heat and simmer 3-4 minutes.
  7. Once chicken is done, pour sauce on top and mix well.
  8. Microwave Veetee Thai Jasmine Rice according to the package instructions, piercing the film several times and heating for two minutes. Fluff the rice in the tray and scoop into your pineapple boat.
  9. Add chicken to the pineapple boat and drizzle extra sauce.
  10. Garnish with lime zest and lime wedges, and serve with fresh pineapple on the side.
