Usually my husband and I are eating what we like to refer to as “hook me up meals” by Wednesday. Essentially, I’m pulling whatever we have out of the freezer and hoping for the best.
While this may seem like a less than glamorous life for a food blogger, I love the opportunity to get creative while finding something healthy and delicious.

These Chocolate Chip Bite Size Snacks are the perfect treat for your kiddos (and great for adults, too)! It’s the perfect alternative to cookies or store-purchased granola bars. And the best part is that I always have these ingredients in my pantry, so I can make them whenever hunger strikes. The recipe should yield about 8 bites, but I couldn’t stop eating the batter as I was making them, so I ended up with 6!
1 cup quick oats
1/4 cup powdered peanut butter
1/4 cup chocolate chips
1/4 cup maple syrup or honey
1 tsp coconut oil, melted
Combine ingredients in a large bowl using a spatula or wooden spoon.
